Position Summary

The AZ Student Union is looking for a Culinary Analyst (Program Coordinator) for the Production Kitchen Department. The The Culinary Analyst oversee accuracy of recipes, ensure correct items are included and ensure staff are preparing correctly. They will also be responsible for creating and maintaining reports for developing operational disciplines toward quality assurance.

The Arizona Student Unions consist of both the Student Union Memorial Center (SUMC) and the Park Student Union, as well as Highland Market and a number of convenience stores and food stops around campus. In addition to campus dining services and catering, the Arizona Student Unions also run mall scheduling, concessions at athletic events, Fast Copy & Design, the Union Galleries, Games Room, the Gallagher Theatre, and a Post Office Contract Unit.

The Student Union Memorial Center is one of the largest student unions in the United States. Duties & Responsibilities
  • Analyzes data and produces reports from culinary test kitchen results for effective decision making regarding product selection.
  • Generates reports and ROI analysis as requested for operational scenarios to enhance development of new products and services.
  • Develops and maintains reports and analysis of menu/recipe production costs toward outlet quality and cost consistency.
  • Oversees accuracy in recipe preparation for quality control and makes corrections when needed.
  • Monitors recipe database to ensure accuracy and to determine items to be added or deleted as needed.
  • Assists culinary staff in developing product cross utilization for reduced waste and spoilage.
  • Assists in the budgeting process for timely response toward financial assignments.
  • Updates menu costs on a daily basis and advises Executive Chef on price trends.
  • Coordinates Menu Engineering Analysis utilizing FoodPro and records menu adjustments.
  • Spot-checks recipes and products to ensure consistency and accuracy of written recipes.
  • Establishes and maintains a process to test, evaluate, and update new and old recipes including accurate food item numbers, yields and methods of preparation.
  • Assists with development of recipes for culinary workshops.
  • Coordinates with FoodPro coordinator, purchasing manager, chefs and department registered dietitian to ensure all new or substituted items are accurately updated and provided to Food Pro before they are entered into food production.
  • Ensures that recipes match labeling and nutrition information for each product in production.
  • Works with FoodPro coordinator and registered dietitian on yield tests of current or new recipes to ensure accuracy of nutrition information and food cost.
  • Performs other job-related duties as requested.
Knowledge, Skills, & Abilities
Minimum Qualifications
  • Computer skills to include a strong working knowledge of financial computer systems and personal computer software programs such as Outlook, Access, PowerPoint Word and Excel.
  • Previous experience with testing and writing recipes with basic nutritional knowledge.
  • Excellent written and verbal communication skills with both internal and external customers.
  • Ability to work independently and make decisions; effective decision-making and listening abilities with strong judgment skills, excellent organizational skills to function reasonably under time constraints and within established deadlines.
  • Ability to lift up to 50 pounds.
  • Ability to obtain a valid ServSafe certification within 3 months of hire date.
  • Must have a valid driver’s license at time of employment and ability to drive according to the University Fleet Safety Policy..
  • Ability to write, read and understand English.
Arizona Board of Regents Minimum Qualifications

Bachelor’s degree in field appropriate to area of assignment AND two years of administrative/coordinative program experience; OR, six years of progressively responsible administrative coordinative program experience; OR, any equivalent combination of experience, training and/or education.

Preferred Qualifications
  • Bachelor’s degree in business administration, restaurant resort management.
  • One year Food & Beverage operational experience.
  • Knowledge of menu management systems, (i.e., menu and inventory control systems, FoodPro, Blackboard) unique to an institutional setting that contributes to food ordering, inventory management and food cost evaluation.
  • Knowledge of culinary and nutrition concepts.
