Position Summary

The AZ Student Unions is seeking a Dining Services Division Assistant Manager.
It is the responsibility of the Dining Services Division Assistant Manager to oversee all aspects of the Garde Manger Kitchen to maintain a high quality of food. This includes supervision of two Dining Services Supervisor, Senior positions and a staff of permanent, temporary agency and student employees. This person will oversee scheduling, hiring, evaluation and training of all Garde Manger employees.

The Arizona Student Unions consist of both the Student Union Memorial Center (SUMC) and the Park Student Union, as well as Highland Market and a number of convenience stores and food stops around campus. In addition to campus dining services and catering, the Arizona Student Unions also run mall scheduling, concessions at athletic events, Fast Copy & Design, the Union Galleries, Games Room, the Gallagher Theatre, and a Post Office Contract Unit.

The Student Union Memorial Center is one of the largest student unions in the United States. The SUMC contains everything students need – restaurants, retail spaces, a bank, lounges, study/meeting rooms, a computer lab, art gallery, and a movie theater. SUMC is often referred to as the “living room” of the University. Duties & Responsibilities
  • Provides input into and assists in the execution of a strategic plan for assigned department(s) consistent with the vision of the division and University. Provides input and direction in the development and monitoring of fiscal budgets, division operations and marketing strategies to produce both short term and long-term profitability
  • Provides input into and executes the development, implementation, and measurement of guest service standards within an assigned department(s) consistent with the University core service standards and brand attributes
  • Participates in the research, development, evaluation and implementation of new products, services, technology and processes in anticipation of changing customer needs
  • Works in conjunction with the Student Union Human Resources in the recruitment and hiring of positions: assisting in the formulation of job qualifications and interview questions for the Culinary Department
  • Assists the Executive Chef with staffing and scheduling needs for the Culinary Department
  • Coordinates activities with regard to health inspection reports and facilitates resolutions
  • Utilizes extensive knowledge and experience to maintain quality and proper presentation of products following University of Arizona Culinary Department policies, practices and procedures
  • Oversees menu development from conception through to completion
  • Communicates with chefs, management, employees, and guests through meetings, reports and other means necessary
  • Ensures employee training is maintained and assists in training as needed
  • Provides excellent customer service to both internal and external customers
  • Resolves customer requests/complaints and follows through with necessary action
  • Works varied shifts to include nights, weekends, and holidays; ability to work 50+ hours per week as needed
  • Participates in the budget process, maintains budgeted labor costs and food costs
  • Utilizes Food Pro system properly for purchasing, release orders and cost transfers
  • Maintains safety and health department standards
  • Performs other job-related duties as requested

Physical Requirements

  • Frequently reaches, lifts, shakes, stirs, pours, carries and pushes
  • Often withstands large workload under high heat
  • Ability to lift 50 pounds on occasion

Minimum Qualifications
  • Excellent written and verbal communication skills with both internal and external customers
  • Demonstrated record of teamwork, collaboration and partnership with numerous operations, services, colleagues, and programs
  • Ability to work independently and make decisions; effective decision-making and listening abilities with strong judgment skills, excellent organizational skills to function reasonably under time constraints and within established deadlines
  • Ability to obtain a valid ServSafe certification within 3 months of hire date
  • Ability to work some nights, weekends, and holidays
  • Ability to write, read and understand English
  • Ability to lift 50lbs on occasion
Arizona Board of Regents Minimum Qualifications

Six years of experience in food service operations, which includes one year in a supervisory capacity; OR, two years of college training in Food Service Management AND four years of experience in food service, which includes one year in a supervisory capacity; OR, any equivalent combination of experience, training and/or education.

Preferred Qualifications
  • Associate’s degree in Food & Beverage, Restaurant Resort Management, and/or certification from accredited culinary institute
  • One year Food & Beverage operational experience
  • Previous experience in all aspects of garde manger kitchen operations
  • Knowledge of menu management systems, (i.e., menu and inventory control systems, FoodPro, Blackboard) unique to an institutional setting that contributes to food ordering, inventory management and food cost evaluation
  • Knowledge of culinary and nutrition concepts
